沏茶之前要预热茶叶,一是为提高茶叶的温度,使其接近沏茶的水温,从而提高茶汤的质量。二是茶叶预热后,随茶汤温度升高,有利于鉴赏茶叶之香气并鉴别茶叶品质的优劣。</FONT></SPAN></P>
